Title: Royal Cream Puffs Royal Guard Inn B&b, Dahlonega, Georg

Yield: 12 Servings

1/2cButter or margarine
1cBoiling water
1cSifted all purpose flour
1/2tsSalt
4 Eggs, unbeaten

Add butter to boiling water; heat until butter melts. Add flour and salt all at once stirring vigorously. Cook, stirring until mixture leaves side of pan. Remove and cool 1 minute. Add eggs, unbeaten, one at a time, beating with a spoon after each addition until smooth. Drop by tablespoon, full 2" apart on greased baking sheet shaping with a spoon into rounds with a peak on top. Bake at 450F for 10 minutes then 400F for 25 minutes.

Cool: Cut a slit in one side and fill with your favorite cream filling or whipped cream. Dust with powdered sugar or can be served with butterscotch, fudge or fruit topping.
